Alternative Turkey & Sweet Potato Chipotle Burritos

I’m going easy on the red meat so instead of using beef, I went for Turkey. I had a burrito in Morocco which had sweet potato in it… it was dreamy! So I’ve recreated this myself. It’s easy to make, have a watch of the video below and scroll down for the ingredients and directions.

Lean Turkey Mince (approx 350 – 500g)
2 Large Sweet Potatoes
Chipotle Paste
Coconut Oil
Seasoning for the Turkey (I use cayenne pepper, lemon, pepper and all seasoning)
Red Pepper
Yellow Pepper
White Onion
Avocado (optional)

Wash and dice your sweet potato, find a tray, pour 2 table spoons of melted coconut oil in the tray, put your diced sweet potato in the tray and ensure coconut oil has coated all the sweet potato cubes. Lightly season with salt and pepper.Put the tray in the oven at a medium to high heat.

Slice your red peppers, white onion and crush 3 garlic cloves, put a teaspoon of coconut oil in a stir fry pan (big enough for the turkey to go in), put on a medium heat and put the red pepper, white onion and garlic in.

Season your turkey mince with your preferred seasoning, bare in mind you’ll be adding the Chipotle paste later so don’t go too crazy.

When the vegetables go soft add the turkey mince, after 5 minutes when the turkey starts to cook on the outside, add 3 table spoons of chipotle paste and mix in thoroughly.

Allow the turkey to cook completely, add some grated cheese to the pan(I used vegan cheese that worked well as it was quite mild). When that’s cooked leave the mince aside.

When the sweet potato cubes are soft and cooked properly, set them aside.

I used gluten and wheat free wraps, but you can use any, I like to heat mine up in a shallow pan on a high heat for a few seconds.

Put some fresh spinach and avocado in your wrap and add the sweet potato and the turkey mince, wrap and enjoy 🙂
