Pineapple Chicken Curry
March 9th, 2017I made this pineapple chicken curry yesterday and it reminded me why I love this combination. The brown sugar and honey is optional. This meal is very light and quite sweet and the perfect meal for children who struggle to eat fruit and veg. Courgettes are very fulfilling and low in calories so this is the perfect meal for those trying to watch their weight.
Ingredients:
1/2 Courgette
1/8 of a Pineapple (Buy a pre-cut half from the supermarket)
Ginger (Thumb sized)
1/3 cup Lemon Juice
2 Table Spoons of Honey (optional)
Soy sauce
1 Orange
2 Table Spoons of Brown Sugar (optional)
Orange Pepper (Or Green, Red)
1/2 Sliced Onion
Directions:
Dice an eight of a pineapple and pour two table spoons of honey on it in a bowl and mix dice half a courgette and mix into the pineapple, leave in your fridge.
Wash and dice your chicken, lightly season (All purpose seasoning works)
Add a table spoon of coconut oil into a medium depth pan and stir fry your chicken on a medium to high heat
Add diced pineapple with the honey and courgette. Add 2 table spoons of soy sauce to the chicken.
Dice your ginger, onion and orange pepper.
Heat a  separate pan and pour in your lemon juice  and squeeze one orange into the same pot on a medium heat. Add brown sugar and your diced veg and ginger. Keep stirring and turn the heat up. Add a table spoon of honey, mix and then pour over the cocked chicken.
