Orange & Ginger Chicken RecipeMarch 3rd, 2017
Today I made orange chicken, this can also be tweaked using turkey which I used in the video but have done previously with chicken – no real difference.
2 x chicken breasts (or turkey)
1/3 cup cornmeal
1/4 cup flour (wholemeal or white)
Olive Oil/Sun Flower Oil or Coconut Oil
Salt or All Purpose Seasoning
1/2 an Onion
1/4 cup milk
2 Medium Oranges
1/3 cup lemon juice
4 Tbl spoons of Honey
4 tbl spoons of brown sugar
Light soya sauce
Ginger (thumb sized)
Boil a large pan of water. Dice your chicken into medium sized cubes, wash and place into the boiling water. Turn the heat down to medium and allow the chicken to boil until white and visibly cooked to the middle. Drain the chicken and leave aside.
Mix your cornmeal, flour, 1 table spoon of olive oil, milk and one egg into a bowl, add your seasoning to the mixture I’d suggest 1 tablespoon of All Purpose Seasoning. Mix until it becomes a smooth paste.
Heat about 3/4 of a cup of oil in a deep pan, allow to get hot then turn down to a medium heat. Put all of your diced chicken into the smooth paste mixture, in small groups of 3 place the completely covered chicken pieces into the oil, the batter mixture burns quickly! So turn the chicken over within 5 to 10 seconds, you will be able to tell when the chicken is brown and crispy. Keep placing the cooked chicken onto a plate (greaseproof paper is a bonus). Continue until all chicken has been fried.
Dice your onion and ginger, slice your orange in half and have two slices of orange aside. Squeeze your orange halves into a new pan, add your lemon juice, brown sugar, soya sauce and diced ginger and onion, turn the heat to medium high and continue to stir, add honey. Taste the sauce (cool the spoon first), if it tastes too sweet add a bit more soya sauce, if the soya sauce is too strong then add more brown sugar, keep mixing and then add two table spoons of flour, this will thicken the sauce. Turn the sauce on high, the sauce should start to thicken.
Now get your chicken pan, make sure the previous oil is gone but keep about a table spoon of oil, put on a medium-high heat, put your saved slices of orange and put them in the pan to fry slightly, add your battered chicken and slowly pour on your orange sauce. Keep stirring until the chicken is completely saturated in the sauce.
I served mine with rice, if you’re cutting back on your carbs you can have this with couscous, or cauli-rice.
