I’ve never been one to struggle to eat in the morning, it’s one of my favourite meals but for many, breakfast is a chore and sometimes it seems there’s nothing easy to consume when you’re rushing around. Â Here are 5 breakfast ideas you’ll love, and they’re easy to make.
Breakfast Omelette Muffins
If you are seriously pressed for time in the morning then prepare this the night before which will take 10 minutes. Whisk 3 eggs into a bowl and throw in some chopped spring onions, red or green peppers, grind some pepper and sprinkle in some feta cheese. Leave this in a bowl in the fridge. In the morning, grab a muffin tray and spray it with some low cal oil, fill the muffin spaces with your egg mixture and put it on medium to high heat in the oven. It will take about 20 minutes to cook so have your shower, do your hair and by the time you are done they’re ready for you to eat. You can take them on the go with you and they’re easy to eat on the go so you don’t have to worry about crumbs.
Something to prepare the night before, mix some oats with milk in a bowl, pour a little into a small glass cup, sprinkle some dates or raisins on top, and some honey, pour some more of the oat and milk mixture and sprinkle something else on top of that layer, perhaps bananas, and keep layering until you have a sundae-looking mini cup of oat mixture. Basically just keep stacking. Put some clingfilm on top and pop it in the fridge. In the morning you will have an amazing overnight oat breakfast which is quite thick in texture as the oats will have absorbed all of the milk. Depending on how you travel to work you can eat this on the go, it’s not runny like normal porridge.
Greek Yogurt, Honey & Granola
I keep it simple with yogurt and always opt for FAGE’s natural Greek yogurt. I tend not to get flavours instead just add some honey and pour in some granola. You want to look for a granola brand that are low in sugar (just look at the ingredients, if sugar is early on in the list it’s probably quite high in sugar). This is a really nice breakfast to have especiallyÂ if you can’t stomach anything too heavy.
Porridge with fruit
I’ll be honest, I’m not a fan of porridge, I really wish I was but for some reason it doesn’t sit well with me. However porridge is an amazing first meal of the day, I don’t like the idea of instant flavoured oats so get some rolled oats and make some yourself with milk and throw in some strawberries and sliced bananas.
Scrambled Eggs, Avocado and Toast
My all time favourite. I love some scrambled eggs with avocado and toast, a good combination of carbs, fats and proteins on one plate. I’ve been putting turmeric spice in my scrambled eggs which gives it a really nice flavour, with some ground pepper and a pinch of salt. In terms of toast, I don’t eat bread everyday and I’m a lot less bloated when I don’t so if you’re used to having two slices, work your way down to one slice and then have bread every other day and perhaps treat yourself at weekends.
